    Set your oven to 180°C (or 160°C for fan ovens, gas mark 4) to ensure it reaches the right temperature for baking. While the oven heats, grab a mixing bowl and combine porridge oats, desiccated coconut, plain flour, and caster sugar thoroughly for an even mixture.

  2. Melt Butter and Syrup

    In a small saucepan over low heat, melt the butter until completely liquid. Stir in the golden syrup until well combined. In another small bowl, dissolve the bicarbonate of soda in 2 tablespoons of boiling water, then add this mixture to the melted butter and syrup, stirring to blend.

  3. Combine Wet and Dry Ingredients

    Make a well in the center of your dry ingredient mixture and carefully pour in the melted butter and syrup mixture. Using a spatula or wooden spoon, gently fold the dry ingredients into the wet ingredients until just combined, ensuring not to overmix.
