- Eggplants4 large
- Garlic2 cloves
- Kosher Salt2 teaspoons
- Lemon1
- Tahini3 tablespoons
- Extra Virgin Olive Oil3 tablespoons
- Greek Yogurt2 tablespoons
- Cayenne Pepper1 pinch
- Mint1 leaf
- Parsley2 tablespoons
Instructions
Preheat the Grill
5 minSet your outdoor grill to a medium-high temperature, around 400°F (200°C). Lightly oil the grill grate to prevent sticking and ensure an easy release of the eggplants once they are grilled.
Prepare the Eggplants
4 minUsing a sharp knife, carefully prick the skin of each eggplant several times. This will prevent them from bursting while they cook on the grill by allowing steam to escape.
Grill the Eggplants
38 minPlace the prepared eggplants directly on the grill. Turn them occasionally with tongs to ensure even cooking, until the skin is charred and the flesh is very soft, which should take about 25 to 30 minutes.
Cool the Eggplants
18 minAfter grilling, transfer the eggplants to a bowl and cover it tightly with aluminum foil. Allow them to rest and cool for approximately 15 minutes, which helps to steam the flesh and makes it easier to scoop out.
Scoop the Flesh
8 minOnce cooled, cut each eggplant in half lengthwise. Use a spoon to scoop out the soft flesh into a colander set over a bowl, allowing excess moisture to drain for 5 to 10 minutes.
Mash the Eggplant Mixture
5 minIn a mixing bowl, combine the drained eggplant flesh with crushed garlic and kosher salt. Use a fork or a potato masher to blend the mixture until it's creamy while still retaining a bit of texture, which should take about 5 minutes.
Add Remaining Ingredients
5 minWhisk in the freshly squeezed juice from the lemon, tahini, extra virgin olive oil, and a pinch of cayenne pepper. Ensure all ingredients are well combined, creating a smooth and flavorful mixture.
Incorporate Greek Yogurt
3 minGently fold in the Greek yogurt into the mixture until fully integrated. This will add creaminess and a slight tang to your dip.
Chill and Season
Cover the bowl with plastic wrap and place it in the refrigerator to chill completely. Before serving, mix in finely chopped mint and parsley, adjusting the seasonings to taste for a fresh finish.
