Ingredients
- Aubergine1 large
- Tomatoes1 cup
- Onion½ cup
- Garlic6 cloves
- Green chilli1
- Red Chilli Powder¼ teaspoon
- Oil1.5 tablespoon
- Coriander leaves1 tablespoon chopped
- Saltto taste
Instructions
Rinse and Prepare Aubergine
14 minRinse the aubergine thoroughly under cold water to remove any dirt. Use a kitchen towel to dry it completely, then lightly coat the surface with oil to help with roasting. For a delicious smoky flavor, roast it over an open flame, or alternatively, grill it in the oven at 400°F (200°C).
Rotate for Even Cooking
14 minTurn the aubergine every 2-3 minutes while roasting to ensure it cooks evenly on all sides. When it’s soft and tender, check for doneness by inserting a knife; it should glide in without resistance, indicating it's fully cooked.
Cool the Roasted Eggplant
2 minOnce roasted, carefully place the eggplant in a bowl of water to cool it down quickly. This step helps to loosen the skin and makes it easier to peel off later.
Infuse Smoky Flavor with Dhungar
5 minTo enhance the smokiness of the dish, utilize the dhungar technique: heat a piece of charcoal until it's glowing red. Make a few slits in the baingan, place the hot charcoal on a plate with the eggplant, and drizzle a couple of drops of oil on the charcoal. Watch as it starts to smoke, infusing the eggplant with a rich, smoky aroma.
Cover to Trap Smoke
1 minCover the plate tightly with a bowl to trap the smoke and allow it to infuse for 1-2 minutes. This will deepen the flavor profile of your dish, making it more authentic and delicious.
Peel the Roasted Eggplant
3 minAfter the smoking process, peel away the skin from the roasted aubergine. The skin should come off easily; discard it and set the flesh aside for the next steps.
Chop or Mash Eggplant
4 minChop or mash the cooled and peeled eggplant into small pieces. Aim for a fine consistency that will blend well with the other ingredients in the dish, ensuring a smooth texture.
Heat Oil and Sauté Aromatics
3 minIn a kadai or pan, heat 1.5 tablespoons of oil over medium heat. Once the oil is hot, add the finely chopped onions and garlic, stirring to coat them in the oil.
Cook Onions Until Translucent
14 minSauté the onions and garlic until they become translucent, which should take about 5-7 minutes. Be careful not to let them brown, as this can alter the flavor of your dish.
Add Green Chili
1 minStir in the chopped green chili and sauté for an additional minute to release its flavor. This will add a mild heat to the dish, enhancing the overall taste.
Incorporate Chopped Tomatoes
3 minNext, add the chopped tomatoes to the pan and mix everything well. Ensure that the tomatoes are evenly distributed among the onions and garlic for consistent flavor.
Cook Tomatoes Until Oil Separates
18 minAllow the tomato mixture to cook until it softens and the oil begins to separate from it, which usually takes about 5-7 minutes. This will create a rich base for your Baingan Bharta.
Add Red Chili Powder
1 minSprinkle in the red chili powder and mix thoroughly into the tomato mixture. This will add a vibrant color and depth of flavor to your dish.
Mix in Chopped Eggplant
3 minCarefully incorporate the finely chopped or mashed eggplant into the onion-tomato mixture. Stir well to ensure that all ingredients are combined evenly.
Combine All Ingredients
2 minStir well to ensure that all components of the dish are fully integrated. This is key to achieving a harmonious flavor throughout the Baingan Bharta.
Season with Salt and Sauté
5 minAdd salt to taste and sauté the mixture for an additional 4-5 minutes. This step allows the flavors to meld together beautifully and enhances the overall taste of the dish.
Garnish and Serve
2 minFinally, mix in the coriander leaves to add freshness, or use them as a garnish on top of the dish. Serve the Baingan Bharta with phulkas, rotis, or chapatis, or enjoy it alongside rice or bread for a complete meal.
