Instructions
Strain the Yogurt
1 minSet a sieve over a large bowl and line it with a thick piece of non-dyed kitchen paper or a clean muslin cloth. Carefully spoon the natural yoghurt into the sieve, ensuring it is evenly distributed. Cover the top with another piece of kitchen paper, then place it in the refrigerator to strain for a minimum of 12 hours, allowing the whey to separate for a thicker consistency.
Mix Dressing Ingredients
5 minIn a separate mixing bowl, combine lemon juice, the majority of the extra virgin olive oil, and dried mint. Stir the mixture thoroughly to ensure the mint softens and absorbs the flavors, creating a fragrant dressing. Once well mixed, gently fold in the strained yoghurt, discarding any excess liquid that has collected in the bowl below the sieve.
Prepare the Cucumber
8 minTake the cucumber and slice it in half lengthwise. Use a teaspoon to scoop out the seeds from each half to prevent excess moisture in the dip. After halving, chop the cucumber into shorter sections, then coarsely grate it directly into the bowl where the yoghurt was straining for added texture. To remove excess moisture, use your hands or a muslin cloth to squeeze the grated cucumber gently.
Combine and Garnish
4 minIncorporate the drained cucumber into the yoghurt mixture along with the minced garlic and ¾ teaspoon of flaky salt. Stir the ingredients together until everything is evenly distributed. For the finishing touch, drizzle some remaining extra virgin olive oil on top and sprinkle additional dried mint for garnish before serving.
