Steps
- In a large pot, mix together sliced onions, sliced celery, cilantro, and parsley.
- Add turmeric, ground cumin, paprika, ground ginger, cayenne pepper, salt, and black pepper to the pot and stir well.
- Place chicken thighs on top of the mixture and drizzle with olive oil. Cover the pot and simmer over low heat until the chicken is cooked through and tender, around 40 minutes.
- While the chicken is cooking, soak raisins in hot water for 10 minutes, then drain.
- Preheat your oven to 400°F (200°C).
- Transfer the chicken mixture into an oven-safe tagine or casserole dish. Incorporate sweet potato and thinly sliced carrots into the dish and cover with a lid or aluminum foil.
- Bake in the preheated oven for about 40 minutes, or until the sweet potato is soft.
- After 40 minutes, add the drained raisins and prunes to the dish. Cover and continue baking for an additional 10 minutes until the fruits are warmed through.
