Prepare Brioche Bun Mixture
5 minStart by gently warming milk in a saucepan alongside butter and molasses until the butter is fully melted. Once melted, remove from heat and mix in cold water and one egg to cool the mixture slightly before using it in the dough.
Mix Dough and Refrigerate
8 minIn a large mixing bowl, combine bread flour, salt, and yeast, ensuring they are evenly distributed. Pour in the milk mixture and stir with a wooden spoon until just combined; there's no need to knead at this stage. Cover the bowl with a damp towel and place it in the refrigerator overnight to allow the flavors to develop and the dough to rise slowly.
Shape and Rise Dough
10 minThe following day, remove the dough from the refrigerator and place it on a floured surface. Knead it briefly to bring it together, then divide the dough into eight equal portions. Shape each portion into a ball and arrange them on a parchment-lined baking sheet, covering with a towel to rise for about an hour, or until they have doubled in size.
Preheat Oven and Bake Buns
5 minSet your oven to preheat at 220°C (428°F) to ensure it reaches the right temperature for baking. Brush the tops of the risen buns with egg wash, milk, or heavy cream, then sprinkle sesame seeds on top if you like. Bake the buns in the preheated oven for 15-20 minutes until they are golden brown on top and sound hollow when tapped. Allow them to cool on a wire rack afterward.
Sauté Onions and Cook Fillings
~3.5 hrWhile the buns are baking, finely chop the onions and sauté them in a pan with a bit of butter over medium heat until they become caramelized, which should take about 10-15 minutes. Meanwhile, season the sirloin steak with garlic, salt, and pepper, then grill or fry it to your desired doneness, cooking the bacon and eggs in the same pan until crispy and cooked through. Toast the halved buns lightly as well.
Assemble the Chivito Sandwich
10 minStart by spreading mustard on one half of each toasted bun. Layer on the cooked sirloin steak, followed by a slice of ham, a slice of mozzarella, a strip of crispy bacon, a slice of tomato, and a handful of lettuce. Finish the sandwich by adding a fried egg on top, then drizzle with chimichurri sauce and sprinkle on the caramelized onions just before serving for extra flavor.
