Instructions
Melt Butter and Sauté Onion
5 minIn a large skillet, ideally made of cast iron, heat 3 tablespoons of unsalted butter over medium heat until melted. Add in 1 medium chopped onion and sauté it, stirring occasionally, until it becomes translucent and fragrant, which should take about 5 minutes.
Combine Corned Beef and Potatoes
10 minOnce the onion is ready, mix in 3 cups of chopped corned beef and 3 chopped potatoes. Spread the mixture evenly across the skillet to ensure even cooking. Increase the heat to medium-high and use a metal spatula to press the mixture down into the pan, helping it to brown evenly.
Brown the Mixture
10 minLet the mixture cook undisturbed for several minutes until it develops a golden-brown crust on the bottom. Carefully use your spatula to peek underneath; if it’s well-browned, flip sections over to allow the other side to brown as well, pressing down firmly again to promote browning.
Adjust Butter and Continue Cooking
10 minIf you notice the mixture is sticking to the pan, add an additional tablespoon of butter to help loosen it. Keep cooking until the potatoes and corned beef are both nicely browned and crispy, which may take around 5-10 minutes depending on your heat level.
Finish with Parsley and Seasoning
5 minOnce browned to your liking, remove the skillet from heat and stir in chopped fresh parsley for a burst of freshness. Season generously with freshly ground black pepper and a dash of kosher salt to taste, mixing well to ensure even distribution.
