Instructions
Fry Ginger Until Crispy
8 minIn a large pan, heat 2 cups of oil over medium heat until shimmering. Carefully add the ginger and fry for about 4-5 minutes, stirring occasionally, until the pieces are golden brown and crispy. Once done, remove the ginger from the oil and set it aside on a paper towel to drain excess oil.
Prepare Fish Fillet
13 minTake the 1 lb of fish fillet and slice it into uniform strips, about 1 inch wide, for even cooking. Lightly coat each strip with 2 tablespoons of tempura flour, ensuring an even layer for a crispy texture when fried.
Fry the Fish Strips
10 minIn the same oil used for frying ginger, carefully add the coated fish strips in batches to avoid overcrowding. Fry them for about 3-4 minutes, turning occasionally, until they are golden brown and crispy. Once done, remove the fish and let them rest on a paper towel to absorb excess oil.
Chop Garlic and Spring Onions
5 minFinely chop 4 cloves of garlic and 3 spring onions, keeping them separate. The garlic should be minced for a stronger flavor, while the spring onions can be sliced into thin rounds for garnish and texture.
Prepare Soya Beans
3 minTake 800 g of soya beans and drain them thoroughly. If they are stored in a salty brine, rinse them under cold water to reduce the saltiness before use.
Sauté Garlic
3 minIn a deep pan, heat a tablespoon of oil over medium heat. Add the chopped garlic and sauté for about 2-3 minutes until it becomes fragrant and slightly golden, taking care not to burn it.
Stir-Fry Soya Beans
6 minAdd the prepared soya beans to the pan with the sautéed garlic. Stir-fry for about 3-4 minutes, mixing well, and taste to see if they need a hint of sugar to balance the flavor if they are too salty.
Add Water to Soya Beans
3 minPour in 1/2 cup of water into the pan with the soya beans, allowing it to simmer for about 1 minute. This will help to combine the flavors and create a slight sauce around the beans.
Mix and Serve
3 minJust before serving, gently fold in the reserved crispy ginger, the chopped spring onions, and the fried fish into the soya bean mixture. Serve immediately while hot, alongside a bed of steamed rice for a complete meal.
