  • Clotted Cream227g
  • Parmesan cheese100g
  • butter25g
  • Corn flour1 tsp
  • NutmegGrated
  • parsleyChopped
  • Salt2 tsp
  • black pepperto taste

  1. In a medium saucepan, combine clotted cream, butter, and corn flour over low heat, stirring until it simmers gently. Turn off the heat and keep the mixture warm.
  2. In a small bowl, mix Parmesan cheese with nutmeg and a generous amount of black pepper. Do not add salt yet.
  3. Cook fettuccine in a large pot of boiling salted water according to package instructions (typically 3-4 minutes). Once cooked, reserve a cup of the cooking water and drain the pasta, but don’t rinse.
  4. Transfer the pasta to the saucepan with the clotted cream mixture. Sprinkle the cheese mixture over the pasta and gently fold everything together over low heat using a rubber spatula. Add about 3 tablespoons of the reserved cooking water to the mixture.
  5. Stir continuously until the sauce thickens and becomes glossy. Taste and adjust seasoning if necessary.
  6. Serve the pasta in warmed bowls, garnished with chopped parsley or chives, and enjoy!
