- In a medium saucepan, combine clotted cream, butter, and corn flour over low heat, stirring until it simmers gently. Turn off the heat and keep the mixture warm.
- In a small bowl, mix Parmesan cheese with nutmeg and a generous amount of black pepper. Do not add salt yet.
- Cook fettuccine in a large pot of boiling salted water according to package instructions (typically 3-4 minutes). Once cooked, reserve a cup of the cooking water and drain the pasta, but don’t rinse.
- Transfer the pasta to the saucepan with the clotted cream mixture. Sprinkle the cheese mixture over the pasta and gently fold everything together over low heat using a rubber spatula. Add about 3 tablespoons of the reserved cooking water to the mixture.
- Stir continuously until the sauce thickens and becomes glossy. Taste and adjust seasoning if necessary.
- Serve the pasta in warmed bowls, garnished with chopped parsley or chives, and enjoy!
