Instructions
Soak Salt Beef Overnight
1 minThe night before you plan to cook, cut the salt beef into sizable chunks and place them in a bowl filled with water. Allow the beef to soak for 8 to 10 hours to help remove excess salt and tenderize the meat.
Prepare Split Peas
1 minIn a separate bowl, take 1 cup of yellow split peas and cover them with water. Let them soak overnight as well, which will help them cook evenly and soften nicely.
Drain and Prepare Stockpot
5 minOnce soaked, drain the salt beef and place it into a large stockpot. Add approximately 6 to 7 liters of fresh water to the pot, ensuring the beef is fully submerged.
Prepare Pease Pudding Bag
30 minTake the soaked yellow split peas and place them into a pease pudding bag or a piece of cheesecloth. Securely tie the bag, leaving enough space for the peas to swell during cooking, and attach it to the pot's handle to keep it from sinking.
Bring to a Boil
60 minHeat the pot over medium-high heat until the water reaches a rolling boil. Once boiling, reduce the heat to low and allow it to simmer gently for about 2 hours, maintaining a consistent temperature to let the flavors meld.
Prepare Pease Pudding
5 minAfter 2 hours of simmering, carefully remove the pease pudding bag from the pot. Open the bag and transfer the contents into a bowl, then mix in 3 tablespoons of butter and black pepper to taste. Set this mixture aside to let the flavors develop.
Add Cabbage to Boil
30 minIntroduce the chopped cabbage to the pot and allow it to boil for an additional 20 minutes. The cabbage should become tender but still retain its vibrant color during this time.
Add Root Vegetables
10 minNext, add the diced turnip, sliced carrots, and quartered potatoes to the pot. Continue boiling for another 20 minutes, or until all the vegetables are fork-tender and flavorful.
Plate the Meal
10 minOnce everything is cooked, carefully remove the salt beef and vegetables from the pot using a slotted spoon. Arrange them beautifully on a serving platter to showcase the hearty meal.
Make Pot Liquor or Gravy
28 minThe flavorful cooking liquid left in the pot can be enjoyed as pot liquor or reduced further to create a rich jus or gravy. Strain it if necessary for a smoother texture before serving alongside the dish.
