Ingredients

  • Beef250g
  • Rice noodles100g
  • Ginger1 tablespoon chopped
  • Garlic2 chopped
  • Lemongrass Stalks3
  • Coriander leaves2 tablespoons
  • Red chilli2 sliced
  • soy sauce2 tablespoons
  • Five Spice Powder1 teaspoon
  • Brown Sugar1 teaspoon
  • Beef Stock400ml
  • Vegetable oil2 tablespoons
  • LimeTo serve

Instructions

  1. Blend Aromatic Ingredients

    5 min

In your food processor, add ginger, garlic, lemongrass, coriander leaves, and 1 sliced red chilli. Blend these ingredients until you achieve a smooth paste, which should take about 1-2 minutes. This mixture will form the aromatic base of your stew.

  2. Cook Aromatic Purée

    11 min

In a skillet, pour in vegetable oil and heat it over low heat. Once the oil is warmed, add the blended purée to the pan and sauté for approximately 5 minutes, stirring occasionally until it becomes fragrant and slightly thickened.

  3. Add Beef and Seasonings

    34 min

Introduce beef pieces into the pan along with soy sauce, five spice powder, brown sugar, and beef stock. Stir well to combine all ingredients, cover the pan, and increase the heat to bring the mixture to a boil, then reduce to a simmer. Let it cook for about 1 hour and 15 minutes, stirring occasionally to prevent sticking.

  4. Simmer and Tenderize

    34 min

After 1 hour and 15 minutes, remove the lid from the pan to allow steam to escape. Continue to simmer the stew for an additional 15 minutes, which will help the beef become tender and the sauce to reduce slightly. You'll know it's ready when the beef is fork-tender and the sauce has thickened.

  5. Prepare Rice Noodles

    11 min

While the stew is finishing, cook the rice noodles according to the package instructions, usually about 4-6 minutes. Once cooked, drain the noodles well and divide them into serving bowls, creating a bed for the stew.

  6. Serve Beef Stew Over Noodles

    5 min

Ladle the aromatic beef stew generously over the prepared rice noodles. Garnish with the remaining sliced chilli and coriander leaves for a fresh touch, and serve with lime wedges on the side for an added zesty flavor when squeezed over the dish.
