Instructions
Roast the Goat Meat
51 minBegin by placing the goat meat on a grill or in a roasting pan over medium heat. Roast it for approximately 50 minutes, ensuring to turn the meat occasionally for even cooking. As you roast, sprinkle a pinch of salt over the meat to enhance its flavor; look for a nice golden-brown color as a sign it's cooking well.
Prepare the Ugali Base
8 minIn a heavy-bottomed saucepan, bring about 4 cups of water to a rolling boil along with a pinch of salt. Once boiling, gradually add the corn flour, letting it sift through your fingers to avoid clumping. Stir continuously to incorporate the flour into the water, creating a smooth mixture.
Thicken the Ugali Mixture
10 minReduce the heat to medium-low and continue stirring the mixture regularly. Use a wooden spoon to break up any lumps that form as it cooks. After about 10 minutes, the ugali should thicken significantly and begin pulling away from the sides of the pot, achieving a firm and slightly sticky texture.
Cool the Ugali
Once the ugali has reached the right consistency, remove the pot from heat and set it aside to cool slightly. This will make it easier to handle when shaping it later. Let it rest for about 5 minutes.
Shape and Serve Ugali
5 minTransfer the slightly cooled ugali to a large serving bowl. Wet your hands with water to prevent sticking, and then take a portion of the ugali and shape it into a smooth ball. Present it on the table for serving alongside the roasted goat.
Mix the Kachumbari
8 minIn a mixing bowl, combine diced tomatoes, finely chopped onion, minced green chilli, and chopped coriander leaves. Toss the ingredients together until well combined, ensuring the flavors meld. This fresh salad will add a vibrant contrast to the roasted meat.
Serve and Enjoy
1 minArrange the roasted goat meat on a platter next to the ugali and kachumbari. Serve everything together while still warm, allowing everyone to enjoy this delicious Kenyan feast.
