Instructions

  1. Preheat Oven and Prepare Tin

    Set your oven temperature to 160°C (140°C for fan ovens) or gas mark 3. While the oven heats up, take a deep 20cm cake tin, grease it thoroughly, and line both the base and sides with baking parchment to prevent sticking.

  2. Melt Honey, Sugar, and Butter

    In a medium saucepan, add 300g clear honey, 100g brown sugar, and 140g unsalted butter. Heat the mixture over medium heat, stirring occasionally until everything is completely melted and combined. Once melted, remove the saucepan from the heat and allow the mixture to cool slightly before using.

    In a large mixing bowl, combine 375g self-raising flour, 3 tsp ground ginger, 1 tsp ground cinnamon, 1/2 tsp ground clove, 1/4 tsp ground nutmeg, and 1/4 tsp pepper. Use a whisk to ensure the dry ingredients are evenly mixed for a consistent flavor throughout the cake.
