Instructions
Marinate the Beef Fillets

Place the fillets into a resealable sandwich bag along with olive oil, sherry vinegar, and the leaves from parsley stalks. Seal the bag and gently pound the steaks using a rolling pin to help the marinade penetrate the meat. Allow the beef to marinate in the refrigerator for 1 to 2 hours for optimal flavor absorption.
Blend Green Sauce Ingredients
5 minFor the vibrant green sauce, combine the remaining sauce ingredients, including basil leaves, jalapeno, spring onions, and caster sugar, in a blender. Add about 1 tablespoon of water to help with blending and process until the mixture is completely smooth. This sauce will create more than is needed for the sandwich, so consider storing the extra in an airtight container for up to a week.
Sear the Beef Steaks

Once hot, remove the garlic and parsley stalks from the marinated steaks and season the beef generously with salt and pepper. Sear the fillets for roughly 2 minutes on each side until they develop a nice brown crust. After cooking, let the steaks rest on a plate for a few minutes; during this time, place the ciabatta halves cut-side down on the plate to soak up the flavorful juices.
