- Apple Cider Vinegar2 teaspoons
- Scallions4, chopped
- Cilantroto garnish

Instructions
Prepare the Eggplant
7 minBegin by slicing the Asian eggplants lengthwise into quarters, followed by cutting them into large batons. This helps the eggplant cook evenly and absorb flavors. Once cut, set them aside for later use.
Mix Chicken Stock Sauce
4 minIn a small bowl, whisk together the chicken stock, sugar, and soy sauce until well combined. This mixture will add depth and balance to the dish. Set this sauce aside for later incorporation into the stir-fry.
Combine Chili Mixture
4 minIn a separate bowl, blend the chili bean paste, minced garlic, ginger, and Sichuan peppercorns until thoroughly mixed. This aromatic paste will serve as the base for the dish, imparting a spicy and fragrant flavor. Set aside for future use.
Prepare Cornstarch Slurry
4 minIn a third bowl, create a cornstarch slurry by mixing cornstarch with one tablespoon of water, stirring until smooth. This will help thicken the sauce later in the cooking process. Set this mixture aside as well.
Mix Scallions and Vinegar
3 minIn another bowl, combine the chopped scallions with apple cider vinegar, tossing them together to meld the flavors. This mixture will add brightness and a tangy note to the finished dish. Set aside for the final steps.
Heat Peanut Oil
10 minIn a wok or large sauté pan, heat peanut oil over medium-high heat until it shimmers and is nearly smoking. This high temperature is essential for achieving a good sear on the eggplant. Carefully add the eggplant batons and sauté, stirring frequently until they are browned and blistered, adding more oil if needed.
Add Chili Mixture
2 minOnce the eggplant is nicely blistered, stir in the chili mixture from step 3. Continue to sauté for about 30 seconds, allowing the ingredients to meld and the aroma to fill the kitchen. This step enhances the overall flavor profile of the dish.
Incorporate Chicken Stock Mixture
3 minPour the chicken stock mixture from step 2 into the pan, then reduce the heat to medium-low. Allow the contents to simmer for approximately 90 seconds, letting the flavors develop and the eggplant absorb the sauce.
Thicken the Sauce
2 minAdd the cornstarch slurry from step 4 to the pan and stir continuously until the sauce begins to thicken slightly. This will create a glossy coating on the eggplant and enhance its texture, making it more appealing.
Finish with Scallions
2 minFinally, add the scallion and vinegar mixture from step 5 to the pan, cooking for an additional 15 seconds. This step brightens the dish and adds a fresh crunch from the scallions.
Garnish and Serve
1 minOnce cooked, remove the dish from heat and garnish with fresh cilantro before serving. Enjoy the dish hot, either as a side or a vegetarian main course, letting the vibrant flavors shine through.
