Ingredients

  1. Preheat Oven and Prepare Squash

Roast for about 20-30 minutes, flipping the pieces halfway through, until they are soft and golden brown. Once cooked, allow them to cool slightly before chopping into cubes.

  2. Cook Lentils

    Thoroughly rinse the brown lentils under cold water to remove any debris. In a pot, combine the lentils with enough water to cover them, then bring to a boil over medium-high heat. Once boiling, lower the heat to a simmer and cook uncovered for 20-30 minutes, or until the lentils are tender but not mushy. Drain the lentils and set aside for later use.

  3. Sauté Aromatics
