Ingredients

  • Spaghetti300g
  • Chorizo80g
  • Red pepper2
  • Parsley20g
  • Parmesan cheese50g
  • Olive Oil2 tbsp
  • Saltto taste
  • Black Pepperto taste

Instructions

  1. Boil Water and Prep Ingredients

    11 min

Start by filling a large pot with water and placing it over high heat until it comes to a vigorous boil. While the water heats, take the chorizo and slice it into strips. For the red peppers, remove the seeds and chop them into bite-sized pieces, then finely chop the parsley. This will ensure that all your ingredients are ready for cooking once the water is boiling.

  2. Cook the Spaghetti

    4 min

When the water reaches a rapid boil, add the spaghetti along with a generous pinch of salt to enhance the flavor. Stir the pasta gently to prevent sticking and let it cook for about 3 minutes, or until it starts to soften. The spaghetti should be slightly undercooked at this stage, as it will finish cooking when combined with the other ingredients.

  3. Sauté Chorizo and Peppers

    5 min

In a large skillet, pour in the olive oil and heat it over medium heat. Once hot, add the sliced chorizo and chopped red peppers to the skillet, seasoning with a generous amount of black pepper. Sauté these ingredients for approximately one minute until the chorizo is heated through and the oil takes on a vibrant reddish color from the spices in the chorizo.

  4. Combine Spaghetti and Sauce

    5 min

Before draining the pasta, reserve half a mug of the cooking water to use later. Drain the remaining water from the spaghetti and then immediately add it to the skillet with the sautéed chorizo and red peppers. Toss the pasta in the skillet to evenly coat it with the flavorful oil and ingredients.

  5. Finish and Serve

    5 min

Stir in the chopped parsley and finely grated parmesan cheese, mixing everything together thoroughly. If the dish seems dry, add a splash of the reserved pasta water to achieve the desired consistency. Serve the spaghetti hot, with extra parmesan cheese on the side for those who want more.
