  1. Prepare the Dough

Next, add the egg white, half of the egg yolk (set aside the other half for later), white wine vinegar, a pinch of salt, and enough cold water to create a pliable dough. Knead the dough on a floured surface until it becomes smooth and elastic, then wrap it in plastic wrap and let it rest at room temperature for 30 minutes.

  2. Preheat Oven and Sauté Filling

    Set your oven to preheat at 180°C (fan 160°C, gas mark 4) to ensure it's ready for baking later. While the oven heats, trim the green tops off the spring onions and chop the white parts finely. Trim the edges with a knife and crimp them securely to ensure the empanadas are well sealed. Position the empanadas on a greased baking sheet, lying on their sides or standing on their crimped edges. Brush the tops with the reserved egg yolk mixed with a little water for a golden finish.
