Ingredients

  • Summer squash2
  • Eggs2
  • Flour300g
  • Baking powder1/4 tsp
  • Olive Oilsplash

Instructions

  1. Combine Ingredients in Bowl

    8 min

In a large mixing bowl, add 2 summer squashes that have been grated or finely chopped, 2 eggs, 300g flour, and 1/4 tsp baking powder. Stir the ingredients together until they form a thick, sticky batter. If the consistency seems too runny, gradually incorporate a bit more flour until it thickens to your desired texture.

  2. Prepare Baking Tray

    3 min

Take a round baking tray that is approximately 2 inches deep and coat the base and sides with a splash of olive oil. Ensure that the oil is evenly distributed to prevent the pie from sticking during baking.

  3. Spread Mixture in Tray

    39 min

Carefully transfer the prepared mixture into the greased baking tray, spreading it out evenly to ensure uniform cooking. To enhance the texture, pour a small amount of olive oil onto your hand and gently rub it over the surface of the mixture in circular motions, flattening it slightly and giving it a subtle shine.

  4. Bake the Pie

    1 min

Place the tray in a preheated oven set at 180°C (about 350°F) and bake for approximately 40 minutes. Keep an eye on it; you're looking for a beautifully golden brown top as an indicator that it’s done.

  5. Cool and Cut Pie

    3 min

Once baked, remove the pie from the oven and allow it to cool in the tray for a few minutes. After it has cooled slightly, cut into squares for easy serving and enjoy!
