  1. In a shallow bowl, whisk together 2 medium eggs, 2 tablespoons of double cream, 2 tablespoons of milk, 3 teaspoons of golden caster sugar, and 3 tablespoons of sweet sherry. Cut 4 thick slices of bread in half and immerse them in the egg mixture, ensuring both sides are well-coated. Allow the bread to soak for 10 minutes, gently flipping occasionally to avoid sogginess.
  2. Heat 1½ tablespoons of olive oil in a large frying pan. Fry the soaked bread slices for about 3 minutes on each side until they turn dark golden and crispy around the edges. Keep the cooked slices warm in a low oven while frying the remaining pieces.
  3. Serve the torrijas on plates, dusted with icing sugar and accompanied by crème fraîche or Greek yogurt.
