Instructions
Prepare the Egg Mixture
8 minIn a shallow bowl, combine 2 medium eggs, 2 tablespoons of double cream, 2 tablespoons of milk, 3 teaspoons of golden caster sugar, and 3 tablespoons of sweet sherry. Use a whisk to blend the ingredients thoroughly until they are smooth and well incorporated. Cut 4 thick slices of bread in half and carefully immerse them in the egg mixture, ensuring both sides are evenly coated and saturated. Allow the bread to soak for about 10 minutes, gently flipping them every few minutes to prevent any one side from becoming too soggy.
Heat Oil and Fry Bread
30 minIn a large frying pan, heat 1½ tablespoons of olive oil over medium heat until it shimmers. Carefully place the soaked bread slices in the pan and fry them for approximately 3 minutes on each side, or until they achieve a dark golden color and a crispy texture around the edges. To keep the cooked slices warm while you finish frying the remaining pieces, transfer them to a low oven set at around 200°F (93°C).
Plate and Serve Torrijas
3 minOnce all the torrijas are cooked, arrange them neatly on individual plates. Generously dust the top of each slice with icing sugar for a touch of sweetness and serve alongside a dollop of crème fraîche or Greek yogurt for a creamy contrast. Enjoy them warm for the best flavor and texture!
