Ingredients

  • Turkey140g
  • Baguette2 small
  • Red Cabbage75g
  • Carrots2 small
  • Cucumber1/4
  • Chicken Liver50g
  • Mayonnaise1 tablespoon
  • Red chilli1 sliced
  • MintHandful
  • Rice Vinegar½ tablespoon
  • Golden Caster Sugar1/2 teaspoon
  • ground ginger1/4 tsp

Instructions

  1. Prepare the Pickled Slaw

    8 min

Begin by chopping the carrots and red cabbage into thin strips and placing them in a large mixing bowl. In a separate small bowl, whisk together ground ginger, rice vinegar, golden caster sugar, and a pinch of salt until the sugar dissolves completely. Pour this flavorful mixture over the vegetables and ensure everything is coated evenly. Let the slaw marinate for a minimum of 15 minutes at room temperature to enhance the flavors and soften the vegetables.

  2. Assemble the Sandwich

    6 min

Take the baguettes and cut them in half lengthwise, creating a spacious pocket for the filling. Spread a generous layer of chicken liver pâté on the bottom half of each baguette. Layer the marinated pickled slaw, followed by thin slices of cucumber and the turkey to create a hearty filling. In a small bowl, combine the mayonnaise with the sliced red chilli for a spicy kick, then dollop this mixture on top of the turkey. Finally, add fresh mint leaves and any extra slices of chilli for garnish before closing the sandwich.
