Instructions
Chop and Soak Dates
8 minFinely chop Medjool dates into small pieces and transfer them into a mixing bowl. Carefully pour boiling water over the chopped dates, ensuring they are fully submerged. Allow them to soak for approximately 30 minutes until they have cooled and softened, then mash them gently with a fork before mixing in the vanilla extract to infuse the flavors.
Preheat Oven and Prepare Tins
5 minSet your oven to preheat at 180°C (fan 160°C/gas mark 4) to ensure it's hot enough when you bake. While the oven heats, grease and lightly flour seven mini pudding tins, each with a capacity of about 200ml. Arrange the prepared tins on a baking sheet for easy transfer to the oven later.
Mix Dry Ingredients
5 minIn a mixing bowl, thoroughly combine self-raising flour and bicarbonate of soda to ensure even distribution of the leavening agent. This step is crucial for achieving a light and airy pudding texture.
Cream Butter and Sugar
8 minIn a large mixing bowl, beat together butter and demerara sugar until the mixture becomes light and slightly fluffy, which usually takes about 3-4 minutes. Gradually add the beaten eggs to the mixture, ensuring to mix well after each addition. Finally, stir in the black treacle until fully blended for that rich flavor.
Combine Dry and Wet Ingredients
8 minCarefully add one-third of the flour mixture to the wet ingredients, followed by half of the milk. Mix gently to avoid overworking the batter, which could result in a denser pudding. Repeat this process until all flour and milk are incorporated, then fold in the soaked dates, creating a thick batter that should be slightly lumpy.
Bake the Puddings
25 minEvenly distribute the batter into the prepared pudding tins, filling each about three-quarters full. Place the tins in the preheated oven and bake for 20 to 25 minutes, or until the puddings have risen and are firm to the touch. A toothpick inserted in the center should come out clean when they are ready.
Prepare Toffee Sauce
50 minWhile the puddings are baking, you can make the toffee sauce. In a medium saucepan, mix together muscovado sugar, butter, and half of the double cream. Heat the mixture over medium heat while stirring constantly until the sugar has completely dissolved, then add black treacle and increase the heat slightly. Allow it to simmer for 2-3 minutes, until it develops a rich toffee color, then remove from heat and stir in the remaining cream for a smooth consistency.
Cool and Invert Puddings
5 minOnce the puddings are baked, let them cool in the tins for a few minutes. Carefully run a palette knife around the edges to loosen them, then invert each pudding onto a plate. Drizzle generously with the prepared toffee sauce, or for an even stickier treat, place the puddings in an ovenproof dish, pour half the sauce over, and cover loosely with foil. Let them rest for a day or two to enhance the flavor.
Reheat and Serve
5 minTo serve, preheat your oven to reheat the puddings for about 15 to 20 minutes, or until the sauce is bubbling and the puddings are warmed through. Serve immediately while hot, and consider adding a scoop of ice cream, a dollop of cream, or custard for an extra indulgent touch.
