Instructions
Soak Rice Flour Pancakes and Noodles
8 minBegin by soaking the rice flour pancakes according to the instructions on the package, or submerge them in boiling water for approximately 30 seconds until they become pliable. Once softened, carefully remove them and place them on kitchen paper to absorb excess moisture. For the rice noodles, follow the package directions for soaking, then drain them well and slice into 2cm strips for easy filling.
Assemble the Rolls
10 minTake one rice pancake and lay it flat on a clean surface. Position a small amount of rice noodles, cooked chicken, and a selection of sliced carrots, cucumber, and red pepper approximately one-third of the way up from the bottom edge, ensuring to leave a 1cm border on each side. Fold the sides inward over the filling, then tightly roll the pancake from the bottom to the top to form a neat, cigar-shaped roll. Store the completed rolls in the refrigerator, covered with a damp kitchen towel, to keep them moist until serving, ideally within one day.
Prepare Dipping Sauce and Serve
5 minIn a mixing bowl, combine the fish sauce, rice vinegar, and juice from half a lime to create a tangy dipping sauce. To serve, arrange the rolls on a platter and garnish with fresh lettuce, coriander, and mint. For an enjoyable eating experience, wrap each roll in a piece of lettuce along with a sprig of herbs before dipping into the prepared sauce for added flavor.
