Instructions
Prepare the Filling
10 minIn a large skillet set over medium heat, pour in 1 tablespoon of olive oil and add 1 lb of ground pork. As the pork cooks, use a spatula to break it into smaller pieces, stirring occasionally. Cook for approximately 6 to 8 minutes until the pork is browned and fully cooked through, with no pink remaining.
Add Vegetables to Skillet
5 minIntroduce 1 clove of crushed garlic, 1 tablespoon of ginger, 1 medium carrot (shredded), 3 chopped scallions, and 3 cups of chopped cabbage into the skillet with the pork. Stir the mixture well and continue to cook for about 3 to 4 minutes, or until the cabbage has softened and become slightly translucent.
Season and Cool Filling
2 minOnce the vegetables are tender, drizzle in 1 tablespoon of soy sauce and 1 tablespoon of rice vinegar, mixing everything thoroughly. Remove the skillet from heat and allow the filling to cool down for a few minutes before proceeding with assembly.
Assemble the Egg Rolls
8 minOn a clean, flat surface, place one egg roll wrapper in a diamond orientation. Spoon approximately 1/4 cup of the filling into the center of the wrapper, then moisten the edges with water using your fingers. Fold the sides over the filling and roll it away from you to secure it tightly, ensuring the filling is well enclosed. Repeat this process until all the filling is used, making at least a dozen egg rolls.
Air Fry the Egg Rolls
15 minPreheat your air fryer to 350°F to ensure even cooking. Carefully arrange the egg rolls in the basket, making sure not to stack them on top of one another. Lightly spray or brush the egg rolls with oil, then cook for 6 to 7 minutes; after this time, flip them over, oil them again, and continue to air fry for an additional 4 to 5 minutes until they are golden brown and crispy to the touch.
Serve with Dipping Sauces
1 minOnce cooked, serve the egg rolls immediately while they're hot and crispy. Pair them with duck sauce, plum sauce, or extra soy sauce for a delightful dipping experience!
