Instructions
Mix Marinade Ingredients
5 minIn a sizable ziplock bag or a mixing bowl, combine the marinade components: coriander, cumin, cardamom, cayenne pepper, paprika, lemon juice, and olive oil. Stir or shake until the ingredients form a uniform mixture, ensuring the spices are well incorporated.
Coat Chicken in Marinade
3 minIntroduce 1 kg of chicken thighs into the marinade, making sure every piece is adequately coated with the flavorful mix. If using a ziplock bag, seal it tightly and gently massage the bag to distribute the marinade evenly over the chicken.
Marinate Chicken
Allow the chicken to marinate for a minimum of 12 hours, with overnight being the optimal choice for deep flavor absorption. Store it in the refrigerator during this time.
Prepare Yogurt Sauce
5 minIn a medium bowl, combine 1 cup of Greek yogurt, a finely minced garlic clove, and a splash of lemon juice. Mix the ingredients thoroughly until smooth, then cover the bowl and refrigerate the sauce until you're ready to serve.
Preheat Grill or Pan
5 minSet your grill or a large heavy skillet to medium-high heat to preheat. Optionally, brush a little oil onto the cooking surface to prevent sticking and enhance the sear.
Grill Chicken
60 minPlace the marinated chicken on the grill and cook for 4 to 5 minutes on one side until it develops a nice char and grill marks. Flip the chicken and continue cooking for another 3 to 4 minutes until it reaches an internal temperature of 75°C (165°F) and is no longer pink inside.
Rest the Chicken
5 minAfter grilling, take the chicken off the heat and cover it loosely with aluminum foil. Let it rest for about 5 minutes, allowing the juices to redistribute and ensuring tender meat.
Serve Chicken Shawarma
5 minSlice the rested chicken into strips and arrange it attractively on a serving platter alongside pita bread, sliced lettuce, and sliced tomato. To enjoy a wrap, spread a layer of the yogurt sauce on a piece of pita, top it with lettuce, tomato, and chicken slices, then roll it up tightly and savor the flavors!
