    In a large frying pan, pour in 3 tablespoons of olive oil and place it over medium heat. Once the oil is shimmering, add 3 cloves of chopped garlic and sauté for about 30 seconds, or until the garlic becomes fragrant and lightly golden. Be careful not to let the garlic burn, as it can become bitter.

  2. Cook the Prawns

    Introduce 400 g of prawns into the pan and stir them gently to coat them in the garlicky oil. Cook for approximately 2 minutes, stirring occasionally, until the prawns start to turn pink and opaque, indicating they are nearly done. Make sure they are evenly cooked for the best texture.

  3. Add Sherry and Finish

    Pour 2 tablespoons of dry sherry into the pan and stir well to combine. Continue cooking for an additional 2-3 minutes, allowing the alcohol to evaporate and the prawns to absorb the sherry’s flavor.
