Ingredients

  • New Potatoes1 lb
  • Carrots1 lb
  • Green beans1 cup
  • Peas1/2 cup
  • butter1/2 cup
  • milk3 cups
  • Heavy cream1/2 cup
  • Dill1 tablespoon
  • Chives1 tablespoon
  • Salt1/2 tsp
  • black pepper1/4 tsp

Steps

  1. Start by boiling a large pot of salted water.
  2. Add carrots and new potatoes to the boiling water and cook for about five minutes until they are fork-tender.
  3. Next, blanch green beans and peas in the same pot for approximately one minute.
  4. Drain the vegetables and set them aside.
  5. In a heavy-bottomed pot or Dutch oven, melt butter over medium heat and add the cooked vegetables to warm them through.
  6. Pour in milk and heavy cream, bringing the mixture to a boil.
  7. Reduce the heat to low and season with salt and black pepper.
  8. Stir in dill and chives, allowing the mixture to simmer for at least 10 minutes before serving warm.
