Instructions
Preheat Oven to 200°C
1 minSet your oven to preheat at 200°C (400°F or Gas Mark 6). This ensures the oven is hot enough to cook the pie evenly once assembled.
Boil and Mash Potatoes
20 minTake 1 kg of potatoes and place them in a pot filled with cold, salted water. Bring the water to a boil and let the potatoes simmer until they are tender, about 15-20 minutes. Drain the water, then mash the potatoes with a knob of butter and a dash of milk until smooth and creamy. Season with salt and pepper to taste for added flavor.
Sauté Leeks
25 minIn a separate pan, melt 75 g of butter over medium heat. Add the sliced leeks and cover the pan. Cook gently for approximately 10 minutes, stirring occasionally, until the leeks are soft and translucent, but not browned.
Prepare Creamy Fish Filling
25 minIn a mixing bowl, combine 75 g of plain flour with 150 ml of white wine until you achieve a smooth paste. Gradually add 568 ml of milk to the pan with the softened leeks, bring it to a boil, then stir in the flour-wine mixture. Cook until the sauce thickens, then season to taste and fold in the fish varieties: salmon, haddock, and smoked haddock. Allow this mixture to cook for an additional two minutes before transferring it to an ovenproof dish.
Cool with Eggs
5 minCarefully scatter 6 eggs over the fish mixture in the ovenproof dish. Allow the mixture to cool for a few minutes until it firms up slightly, which will help the pie hold its shape during baking.
Top with Mashed Potatoes
7 minUsing a spatula or spoon, evenly spread the prepared mashed potatoes over the fish filling, making sure to create a textured surface by dragging a fork across the top. Sprinkle 50 g of Gruyere cheese generously over the mashed layer for a delicious cheesy crust.
Bake Until Golden
1 minPlace the assembled pie in the preheated oven and bake for 30-40 minutes. Keep an eye on it, and look for a golden brown top that is bubbling, indicating that it is ready to be taken out.
