Ingredients

  • Potatoes4 large
  • Spring onions1 bunch
  • plain flour100g
  • Egg white1
  • milk150ml
  • Bicarbonate Of Soda1 tsp
  • Butter3 tbs
  • Vegetable oil2 tbs
  • Cherry Tomatoes6
  • Bacon12 slices
  • Eggs6

Instructions

  1. Preheat Oven and Prepare Potatoes

    8 min

Set your oven to its lowest temperature to keep the cooked components warm as you prepare the meal. Start by peeling 4 large potatoes. Grate 2 of the potatoes finely, then set them aside. Cut the remaining 2 potatoes into chunks and boil them in salted water for about 10 to 15 minutes, or until they are tender enough to mash. Once grated, ensure to squeeze out excess moisture from the grated potatoes using a clean tea towel. Mash the boiled potatoes until smooth and combine them with the grated potatoes, finely chopped spring onions, and plain flour for a cohesive mixture.

  2. Whisk Egg White and Combine Mixtures

    6 min

In a large mixing bowl, vigorously whisk the egg white until it reaches soft peaks, which indicates enough air has been incorporated. Carefully fold in milk to maintain the light texture, then sprinkle in the bicarbonate of soda. Gently mix this frothy egg mixture into the potato blend until just combined, taking care not to deflate the egg whites too much.

  3. Cook Boxty in Frying Pan

    30 min

Place a large non-stick frying pan on the stove over medium heat. Add 1 tablespoon of butter along with a drizzle of vegetable oil to prevent sticking. Carefully spoon 3-4 portions of the potato mixture into the pan, flattening them slightly for even cooking. Fry each side for 3-5 minutes until they turn a beautiful golden brown. Once cooked, transfer the boxty to the warm oven while you cook the remaining portions, adding additional butter and oil as necessary. This recipe should yield approximately 16 crumpet-sized boxty.

  4. Prepare Grilled Tomatoes and Bacon

    30 min

Set your grill to medium heat to cook the bacon and cherry tomatoes. Place the cherry tomatoes in a heavy-based pan, adding a knob of butter and a splash of oil, and sauté them for about 5 minutes until they become softened and slightly blistered. Simultaneously, grill the bacon until it is crispy and golden. Once everything is cooked, serve the boxty stacked with the crispy bacon and eggs, accompanied by the flavorful grilled tomatoes on the side.
