Ingredients

  • Kale1 bunch
  • Bacon2 strips
  • Garlic3 cloves, chopped
  • Onion1 medium
  • Tomatoes1, diced
  • Red pepper1, chopped
  • paprika1/2 tsp
  • Thyme1 sprig
  • Banana (Plantain)4, sliced
  • Vegetable oilsplash

Instructions

  1. Prepare the Kale

    5 min

Start by removing the leaves and tender stems from the Kale. To clean them thoroughly, soak the leaves in cold water for about 5 to 10 minutes while you gather and prepare your other ingredients, ensuring any dirt or grit is washed away.

  2. Chop Aromatics

    5 min

Finely slice the Onion, mince the Garlic, and dice the Tomato into small pieces. Once prepared, set these aromatic ingredients aside for later use in the sautéing process.

  3. Chop the Kale

    4 min

After soaking, drain the Kale and chop it into bite-sized chunks. This will help the kale cook evenly and blend well with the other ingredients when sautéed.

  4. Cook the Bacon and Aromatics

    5 min

In a saucepan over medium heat, cook the Bacon strips until they are crispy and golden brown. Once done, add the chopped Onion, minced Garlic, and a sprig of Thyme. Stir the mixture for about one minute until the onions become translucent and aromatic.

  5. Sauté Vegetables

    3 min

Add the diced Tomato and chopped Red Pepper to the pan, along with Paprika. Sauté this mixture for an additional 2 to 3 minutes, allowing the vegetables to soften and meld together, releasing their flavors.

  6. Steam the Kale

    6 min

Stir in the chopped Kale along with a splash of Vegetable Oil. Mix everything thoroughly and cover the pan, steaming for about 6 to 8 minutes. The kale should become tender; add a little water if it starts to stick. Once done, taste and adjust the seasoning before removing from heat.

  7. Prepare the Plantains

    4 min

To prepare the Plantains, cut off both ends and make a shallow slit down one side to facilitate easy peeling. Carefully remove the peel and slice the plantains into medium-sized pieces lengthwise, ensuring they are uniform for even cooking.

  8. Heat Frying Pan

    2 min

Heat a large frying pan over medium heat and lightly spray it with Vegetable Oil. Ensure the pan is hot enough to create a sizzle when you add the plantains, which will help them crisp up nicely.

  9. Fry the Plantains

    6 min

Add the sliced plantains to the pan and fry them over medium heat, shaking the pan occasionally to ensure even cooking. As they begin to brown, continue to add oil spray and adjust the seasoning with salt and pepper until they reach a golden color and crisp texture, roughly 8-10 minutes.

  10. Plate and Serve

    1 min

Once everything is cooked, serve the sautéed callaloo alongside the crispy fried plantains. This dish is best enjoyed fresh and hot for maximum flavor and texture.
