  1. Prepare the Pastry Mixture

    Begin by rubbing 225g of cold diced butter into 350g of plain flour. Use your fingertips to combine until the mixture resembles coarse breadcrumbs. Next, add 100g of golden caster sugar along with a pinch of salt, ensuring everything is mixed evenly to create a sweet, crumbly texture.

  2. Knead the Dough

    Gather the crumbly pastry mixture and form it into a ball with your hands, being careful not to add any liquid. Briefly knead the dough until it holds together and has a smooth surface, resembling shortbread dough. You can use the dough immediately or wrap it in cling film and refrigerate it for later use.

  3. Preheat the Oven

    Set your oven temperature to 200°C (or gas mark 6, fan 180°C) to preheat while you prepare the pastry tins. Line two 12-hole patty tins by taking small, walnut-sized pieces of your pastry and pressing them firmly into each hole, ensuring an even layer covers the base.
