Instructions

  1. Preheat Oven and Prepare Tins

    Start by preheating your oven to 180°C (160°C for fan ovens) or gas mark 4 to ensure it's hot enough for baking. Melt 25g of butter and use a pastry brush to generously coat the wells of your mini bundt tins. Once greased, sprinkle a little plain flour into each well, making sure to shake off any excess to prevent sticking.

  2. Cream Butter and Sugar

    In a mixing bowl, combine 150g of butter and 125g of caster sugar along with a pinch of salt. Use an electric whisk to beat the mixture until it reaches a light and creamy consistency, which should take about 3-4 minutes. Then, add the 3 eggs one at a time, ensuring each egg is fully incorporated before adding the next for a smooth batter.

  3. Sift Dry Ingredients and Add Cocoa

    In a separate bowl, mix 175g of plain flour with 1 tsp of baking powder. Sift this dry mixture into the creamy batter, stirring gently until the mixture is smooth and well combined. In another small bowl, combine 2 tsp of cocoa powder with 3 tablespoons of milk, mixing until it forms a smooth paste, then set aside.

    Take a tablespoon of the plain batter and carefully spoon it into each prepared bundt tin, filling them about a third of the way. Next, take the remaining plain batter and gently fold in the cocoa mixture, then distribute this chocolate batter evenly among the molds on top of the plain batter, creating a lovely marbled effect.
