Ingredients

  • Noodles1 packet
  • Water2 cups
  • Eggs1 large
  • soy sauce1 tbsp
  • Chilli Sauce1/2 tsp
  • Spring onions1 tbsp
  • Salt1/2 tsp
  • Pepper1/2 tsp

Instructions

  1. Boil Water and Egg

    13 min

Begin by heating 2 cups of water in a saucepan over high heat until it reaches a rolling boil. Carefully lower 1 large egg into the boiling water using a spoon to prevent cracking, and let it cook for approximately 6½ to 7 minutes. The egg should feel firm but slightly soft in the center for a perfect soft-boiled texture.

  2. Chill in Ice Bath

    8 min

Once the timer goes off, swiftly transfer the egg from the boiling water into a bowl filled with ice water. This will stop the cooking process and help achieve a tender egg white and creamy yolk. Let the egg sit in the ice bath for 3 to 5 minutes until completely cooled.

  3. Marinate Egg (Optional)

After chilling, peel the egg carefully and prepare a marinade by mixing 2 tbsp soy sauce, 2 tbsp mirin, 1 tsp sugar, and 4 tbsp water in a small bowl. Submerge the peeled egg in the marinade and let it soak for at least 4 hours, or overnight for deeper flavor infusion. This step is optional but adds a delicious umami flavor to the egg.

  4. Cook Noodles

    9 min

While the egg is marinating, take 1 packet of noodles and cook them according to the package instructions, usually boiling for about 3 to 5 minutes until they are tender but still chewy. Drain the noodles and set them aside, ready to be combined with the broth.

  5. Assemble and Serve

    5 min

To serve, place the cooked noodles in a bowl, then slice the marinated egg in half and gently place it on top of the noodles, letting the yolk mingle with the broth. Garnish the dish with 1 tbsp spring onions, 1/2 tsp chilli sauce, 1/2 tsp salt, and 1/2 tsp pepper to enhance the flavors before enjoying your delicious ramen.
