Prepare the cucumbers
6 minStart by peeling the cucumbers to remove the skin, which can be tough. Slice each cucumber lengthwise into quarters, then, if you find the seeds to be bitter, remove and discard them. Finally, chop the quarters into bite-sized pieces, about 1/2-inch thick, to ensure they are easy to eat and will absorb the dressing well.
Combine the salad
3 minIn a large serving bowl, add the prepared cucumber pieces. Sprinkle salt over them to enhance their natural flavor, then drizzle in sesame oil and rice vinegar for a tangy kick. Add the basil leaves (if using) and red chili flakes for a hint of spice, tossing everything gently to combine. For an added crunch and flavor, finish by sprinkling toasted sesame seeds on top just before serving.
