Ingredients
- Shrimp1 lb
- Snow Peas1/2 lb
- peanut oil2 tablespoons
- Scallions4
- Garlic3 cloves Chopped
- ground ginger1 tablespoon
- soy sauce2 tsp
- Chicken stock1/4 cup
- cornstarch2 tsp
- Dry sherry1 tablespoon
- Kosher Salt1/2 tsp
- Sesame Seed Oil2 tsp
Instructions
Marinate the shrimp
5 minIn a spacious bowl, mix together cornstarch, dry sherry, and kosher salt until well combined. Introduce 1 lb shrimp into the mixture, ensuring each piece is thoroughly coated. Allow the shrimp to marinate for 15 to 20 minutes, which will help tenderize and flavor the shrimp.
Prepare ginger and garlic
13 minWhile the shrimp absorbs the flavors from the marinade, finely chop 3 cloves garlic and measure out 1 tablespoon ground ginger. This will enhance the dish's aroma and flavor profile when added to the stir-fry.
Stir-fry ginger and garlic
5 minPreheat a wok or large sauté pan over high heat for about 1 minute until hot. Add 2 tablespoons peanut oil and let it heat for approximately 30 seconds until shimmering. Stir in the chopped ginger and garlic, sautéing for about 30 seconds until they release their fragrant aroma, being careful not to burn them.
Cook shrimp and peas
8 minTo the pan, add the marinated shrimp along with any remaining marinade, 1/2 lb snow peas, 2 tsp soy sauce, and 1/4 cup chicken stock. Stir-fry the mixture for about 2 minutes, or until the shrimp turns a vibrant pink color and the snow peas are tender yet crisp.
Finish with scallions and sesame oil
4 minIncorporate 4 chopped scallions into the pan and stir-fry for an additional minute, allowing the scallions to soften slightly. Remove the pan from heat, drizzle with 2 tsp sesame seed oil, and toss everything together to ensure even distribution of flavors. Serve the dish hot alongside steamed rice for a complete meal.
