Instructions
Prepare the sauce
2 minIn a mixing bowl, combine sesame seed oil, soy sauce, and seasoned rice vinegar. Stir the mixture well until all ingredients are fully blended and set aside for later use.
Cook the rice noodles
9 minBring a large pot of water to a rolling boil. Add the vermicelli rice noodles and use tongs to ensure they are fully submerged; cook for about 2 minutes until they are tender but still slightly firm to the bite. Drain the noodles, rinse them under cold water to stop the cooking process, and use scissors to cut them into shorter lengths for easier tossing later.
Scramble the eggs
6 minIn a small bowl, whisk the eggs until well combined. Heat 1 tablespoon of oil in a skillet over medium heat, pour in the eggs, and cook, stirring gently, until soft curds form, which should take about 2 minutes. Once cooked, remove the eggs from the skillet and set them aside.

Add shrimp
5 minIntroduce the shrimp into the skillet, stirring gently to combine. Cook for an additional 3 minutes, or until the shrimp turn a vibrant bright pink and are opaque, indicating they are fully cooked.
Combine noodles
2 minAdd the reserved scrambled eggs, the prepared sauce, and half of the cooked noodles to the skillet. Toss everything together for about 1 minute until well incorporated and the noodles are evenly coated with the sauce.
Finish cooking
4 minIncorporate the remaining noodles into the skillet, tossing everything together for another minute. Ensure that all ingredients are mixed thoroughly and heated through, with the noodles absorbing the flavors from the sauce.
