Instructions
Heat the Wok and Cook Chicken
13 minBegin by heating a wok or large frying pan over high heat until it’s very hot. Pour in 2 tablespoons of vegetable oil and allow it to shimmer before adding 450 grams of chicken. Stir-fry the chicken vigorously for about 8-10 minutes, or until it is evenly browned and cooked through. Use a slotted spoon to transfer the chicken to a plate, leaving any excess oil in the pan.
Sauté Garlic and Shallots
4 minWith the same wok still hot, pour in any remaining oil and add 3 tablespoons of chopped garlic and 3 tablespoons of chopped shallots. Stir-fry these aromatics for about 3 minutes until they become fragrant and turn a lovely golden brown, enhancing the overall flavor of the dish.
Combine Ingredients and Finish Cooking
13 minAdd the cooked chicken back into the wok and toss in 3 red chillies, 2 tablespoons of fish sauce, 2 teaspoons of soy sauce, and 2 teaspoons of sugar. Stir-fry everything together on high heat for another 8-10 minutes, ensuring the chicken is fully cooked and well-coated with the sauce. Just before serving, fold in a generous handful of basil leaves for a fresh finish, and serve hot.
