  1. Soak and Prepare Potatoes

    Begin by immersing the potatoes in a pot of boiling water for about 30 minutes. This soaking process helps to soften them, making them ideal for achieving a crispy texture later. After soaking, drain the potatoes and allow them to air-dry for 5 minutes before moving on. Meanwhile, preheat your air fryer to 200°C. In a mixing bowl, combine the dried potatoes with 1 tablespoon of olive oil, 1/2 teaspoon of salt, and freshly cracked black pepper. Toss everything together until the potatoes are evenly coated, then carefully place them in the air fryer basket. Cook for approximately 20-30 minutes, or until the potatoes are golden brown and have a crisp exterior.

  2. Sauté Onion and Garlic

    While the potatoes are cooking, take a small saucepan and heat the remaining 2 tablespoons of olive oil over medium-low heat. Once hot, add the chopped onion and sauté for about 8-10 minutes, stirring occasionally, until the onion is softened but not caramelized. Next, introduce 1 crushed garlic clove to the pan and sauté for an additional minute, allowing its fragrance to develop. Then, sprinkle in 1 tablespoon of paprika and stir for about 30 seconds to release its flavor. Follow this by adding 1 tablespoon of tomato purée and cooking for another minute. Finally, pour in the 225g of tinned tomatoes and let the mixture simmer for 5-10 minutes, stirring occasionally, until the sauce thickens slightly and is well combined.

  3. Plate and Garnish

    Once the potatoes are finished cooking and have reached a crispy texture, transfer them carefully to a serving platter. Gently pour the rich tomato sauce over the crispy potatoes, ensuring they are well covered.
