Instructions
Prepare the Dough
8 minIn a mixing bowl, combine butter and sugar, beating them together until the mixture becomes light and fluffy, which usually takes about 3-5 minutes. Next, incorporate the egg yolks and lemon zest into the mixture, blending well. Gradually add in the all-purpose flour and cornstarch, mixing until a smooth dough forms. Once combined, wrap the dough in plastic wrap and refrigerate it for at least 1 hour to firm up, making it easier to handle later.
Assemble the Alfajores
5 minTake one cooled cookie and generously spread dulce de leche on its surface. Place another cookie on top to create a sandwich, gently pressing them together. For a delightful finish, roll the edges of the cookie sandwich in desiccated coconut, ensuring an even coating for a festive presentation.
Optional: Dip in Chocolate
5 minFor an extra indulgence, melt some chocolate in a microwave or double boiler until smooth. Dip the assembled alfajores halfway into the melted chocolate, allowing the excess to drip off. Place them on a wire rack to set, ensuring the chocolate hardens and forms a beautiful shell around the cookies.
