Instructions
Prepare the Chicken
79 minBegin by placing 4 - 6 chicken breasts directly into the crock pot. Ensure they are evenly distributed for optimal cooking.
Add Vinaigrette Dressing
2 minPour the entire bottle of vinaigrette dressing over the chicken breasts, covering them completely. This will infuse the chicken with flavor as it cooks.
Season the Chicken
3 minSprinkle cumin, smoked paprika, and garlic over the chicken. Use a spoon to gently mix the spices with the dressing, ensuring even coverage.
Cook the Chicken
1 minCover the crock pot with its lid and set it to cook on high for 4 hours. The chicken is done when it’s tender and easily shreds with a fork.
Cool the Chicken
79 minOnce the cooking time is up, carefully remove the chicken breasts from the crock pot and allow them to cool on a cutting board. This will make shredding easier.
Shred the Chicken
79 minUsing two forks, shred the cooled chicken into bite-sized pieces in a glass bowl. Pour most of the cooking liquid over the shredded chicken to keep it moist and flavorful.
Make Guacamole Sauce
5 minTo create the guacamole sauce, blend avocado with green salsa until smooth. Strain the mixture to achieve a silky texture, then transfer it to a squeeze bottle for easy application.
Prepare Sour Cream Sauce
3 minIn a bowl, combine sour cream with milk. Mix thoroughly until the mixture is smooth and pourable, then move it to a squeeze bottle for serving.
Assemble Taco Shells
8 minIn a 9x13 glass baking dish, carefully fill each hard taco shell with a layer of refried beans, followed by the shredded chicken, and top with shredded Mexican cheese. Pack them snugly to prevent tipping.
Bake the Tacos
1 minPreheat your oven to 450°F (232°C) and place the assembled taco dish inside. Bake for 10-15 minutes, or until the cheese is melted and starts to bubble, indicating it’s ready.
Add Fresh Toppings
5 minAfter baking, remove the dish from the oven and top the tacos with halved grape tomatoes, sliced jalapeno, and a sprinkle of cilantro for freshness and color.
Drizzle Sauces and Serve
4 minBefore serving, drizzle the tacos with the prepared guacamole and sour cream sauces. Enjoy your delicious baked tacos while they’re warm and fresh!
