Ingredients
- Chicken Breast8 oz
- Rice1/2 cup
- Water8 cups
- Spring onions1 tbs
- Coriander2 oz
- Saltpinch
- Pepperpinch
- ginger cordial1 tsp
- Ginger1 tsp
Instructions
Marinate the Chicken
5 minIn a mixing bowl, combine chicken, a pinch of salt, a pinch of white pepper, and ginger cordial. Ensure the chicken is evenly coated by mixing well, then set it aside to marinate briefly while you prepare the other ingredients.
Rinse the Rice
5 minPlace rice into a metal bowl or pot and rinse it under cold running water. Swirl the rice gently with your hand to remove excess starch, then drain the water, repeating this process a few times until the water runs clear.
Boil Water and Cook Rice
29 minIn a large pot, pour in 8 cups of water and bring it to a rolling boil over high heat. Once boiling, reduce the temperature to low and add the rinsed rice; stir occasionally for about 20-25 minutes until the mixture reaches a creamy porridge-like consistency. For a thinner porridge, you can incorporate additional water as needed during cooking.
Add Chicken to Cook
11 minCarefully add the marinated chicken pieces to the pot of rice porridge. Allow it to simmer on low heat for an additional 10 minutes, stirring occasionally to ensure even cooking and to prevent sticking.
Mix in Aromatics
2 minIncorporate spring onions, sliced ginger, a pinch of salt, and a pinch of pepper into the pot. Stir the mixture for about 10 seconds to evenly distribute the flavors throughout the porridge.
Serve and Garnish
3 minLadle the warm porridge into bowls and, if desired, top each serving with fresh coriander for added flavor and presentation. Enjoy your comforting bowl of chicken congee!
