  1. Caramelize Chicken

    Start by heating some olive oil in a large skillet over medium heat. Add the chicken pieces, allowing them to sear until they are golden brown on all sides, about 5-7 minutes. Once browned, crumble in a maggi cube for flavor and let the mixture simmer on low heat for approximately 30 minutes, stirring occasionally until the chicken is cooked through and tender.

  2. Sauté Vegetables

    In a separate pot, heat a tablespoon of olive oil over medium heat. Add chopped green pepper, red pepper, sliced mushrooms, sweetcorn, and diced carrots. Sauté the mixture for about 5-7 minutes, or until the vegetables are softened and vibrant in color, stirring frequently to prevent sticking.

  3. Mix Rice and Spices

    Once the vegetables are tender, stir in the rice, a handful of raisins, turmeric, and kabse spice. Pour in 2.5 cups of water, ensuring all ingredients are well combined. Bring the mixture to a boil, then reduce to a simmer and cover the pot, allowing it to cook for about 15-20 minutes until the rice is tender and has absorbed the water.

  4. Bake to Finish Cooking

    After the rice is cooked, transfer the entire mixture into a baking dish, spreading it out evenly. Preheat your oven to 180°C (350°F) and place the dish inside. Bake for an additional 10-15 minutes to meld the flavors together and create a nice crust on top.
