Ingredients

  • Olive Oil1 tbsp
  • Leek1 sliced
  • Chorizo110 g
  • Turmeric1 tsp
  • Rice300 g
  • Fish Stock1 L
  • Peas200 g
  • Frozen Seafood mix400 g

Instructions

  1. Heat Olive Oil and Leek

    5 min

In a deep frying pan, pour 1 tablespoon of olive oil and set the heat to medium. Once the oil is hot, add 1 sliced leek and sauté it for about 5 minutes, until it becomes tender and translucent but avoids browning. This will help to develop a sweet flavor base for your dish.

  2. Cook Chorizo and Add Rice

    15 min

Introduce 110 g of chorizo into the pan, letting it cook until it begins to release its flavorful oils, around 3-4 minutes. Next, stir in 1 teaspoon of turmeric to impart a vibrant color and flavor, then add 300 g of rice. Mix thoroughly so that each grain is coated with the oil and spices, enhancing the overall taste.

  3. Add Fish Stock and Simmer

    1 min

Carefully pour in 1 liter of fish stock, stirring to combine all ingredients. Increase the heat to bring the mixture to a vigorous boil, then reduce the heat to low, allowing it to simmer gently for 15 minutes. Stir occasionally to prevent the rice from sticking and ensure even cooking.

  4. Add Peas and Seafood

    19 min

After 15 minutes of simmering, add 200 g of peas to the pan, mixing them in well. Let it cook for an additional 5 minutes, then fold in 400 g of frozen seafood mix and sauté for just 1-2 minutes until the seafood is heated through and the rice is perfectly tender. Taste and adjust seasoning if necessary, then serve hot with lemon wedges for brightness.
