Instructions
Soak the rice noodles
1 minTake rice stick noodles and fully submerge them in a bowl of water. Allow them to soak overnight or for at least 8 hours until they soften completely, making them pliable for stir-frying.
Boil the rice noodles
15 minBring a pot of water to a rolling boil and add the soaked rice noodles. Cook for 10 to 15 minutes until they are tender but still slightly firm (al dente), then drain and rinse them under cold water to stop the cooking process.
Marinate the shrimp
4 minIn a mixing bowl, combine Prawns, egg, a pinch of white pepper, sesame seed oil, cornstarch, and Vegetable oil. Ensure the shrimp are evenly coated with the marinade, allowing them to absorb the flavors while you prepare the other ingredients.
Cook the shrimp
8 minHeat 2 tablespoons of oil in a hot wok over medium-high heat. Add the marinated shrimp and stir-fry them until they turn golden brown and opaque, which should take about 3-4 minutes. Once cooked, remove the shrimp from the wok and set aside.
Stir-fry the vegetables
8 minIn the same wok, add 1 tablespoon of oil and allow it to heat up. Toss in minced garlic, ginger, and the chopped onion, along with bean sprouts and spring onions. Stir-fry for about 2-3 minutes until the vegetables are tender yet still crisp.
Combine noodles and sauce
8 minReturn the cooked rice noodles to the wok along with cooking wine, oyster sauce, sugar, vinegar, sesame seed oil, a pinch of white pepper, and soy sauce. Toss everything together well, ensuring the noodles are coated with the sauce and heated through.
Thicken the sauce
6 minAdd the previously cooked shrimp back into the wok. To thicken the sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water in a small bowl until smooth, then gradually pour it into the stir-fry while stirring continuously until the sauce reaches your desired consistency.
